We went to Prime for the third time on Saturday night to celebrate our fifth wedding anniversary. The last time we were there was approximately 18 months ago, and it was an amazing experience. Unfortunately, the quality of this establishment has decreased significantly since then.
First, the ambiance was more like a sports bar or casual dining restaurant as opposed to fine dining. It was extremely loud, some customers were wearing jeans, and the servers were rushing around like chickens with their heads cutoff. What's worse is all evening the servers kept moving tables around the dining room to rearrange for incoming parties - it was extremely inappropriate. They would lift the tables above customers' heads to rearrange, and tableclothes would graze the backs of customers' necks when the servers carried them by. Ridiculous.
Next, the food. 18 months ago we ordered the seafood array as an appetizer and absolutely loved it. We raved about it to everyone, and were looking forward to getting it again. Unfortunately, it was highly disappointing. Although the quality of the seafood was excellent, there were far fewer items included than there used to be (though the $30/person pricetag remained unchanged).
After the seafood array, we had the french onion soup and the moonfish sashimi. Both were excellent.
When the steaks came out (a 6 ounce filet for my wife and a bone-in NY strip for me), the server asked us to cut into the steaks right then and there to confirm whether they were cooked properly. I've been to many high end steakhouses, and this is the first time anyone has ever asked me to do this. The chef sent the steaks out - shouldn't the chef know if they are cooked properly? The chef needs to stand by his/her food. As for my steak, it actually was a little overcooked (medium instead of medium rare), but I let it go.
Finally, the dessert menu left much to be desired. Everything on the menu was pre-prepped - there were a variety of cakes, cookies, and pies. Nothing special like creme brulee, lava cake, etc. We got a cookie tray just because we wanted something sweet, but it wasn't exciting.
All in all, I felt like the quality of Prime has gone down since last I was there. Our server was excellent (and got an excellent tip for it), but the issues identified above were a real problem for me. Unfortunately, based on this experience I think I'll have to find another steakhouse to go to in upstate NY, as this was no longer worth the pricetag.
