“Paradise found”
5 of 5 stars Reviewed August 7, 2013

We stayed here for four nights and were overwhelmed by the lovely surroundings, the gorgeous room and our wet-room shower - delightful. The food was excellent and the setting - a pretty, vine-covered courtyard - was just about perfect. The service was charming - friendly & relaxed. We have decided it is in our top three places to return to - four nights was not nearly enough.

I can honestly recommend this hotel to anyone seeking peace and quiet, a relaxing time and the respect of like minded guests as the relaxed atmosphere appears to wash over the entire estate. Beautiful scenery, hospitable owners and staff and delicious food!

Having been bitten by the closing hours on Sundays of pretty much everything, we were ravenous when we arrived at Fargo - the setting was lovely, (we had booked hours before, which is advisable) eating in the kiwi fruit covered courtyard.
We weren't staying there but the hotel itself looked well run and appointed and residents made up a few large tables eating that evening.
the food quality was excellent - oysters from nearby Leucate (Mediterranean saltiness) to start were beautifully fresh and served with a blob of wasabi (probably unnecessarily) but the rabbit confit was superb.
this isn't fine dining, but we weren't looking for that - instead we wanted to find a good local restaurant using locally sourced ingredients, cooked well with a good atmosphere - this was it, and on leaving we rebooked for later that week.

We came across this lovely hotel and restaurant by chance and it turned out to be a truly enjoyable find. We were renting a house in the nearby pretty village of Lagrasse and discovered this place on an excursion one afternoon. We decided that as the setting was so lovely we would book a table for dinner. The terrace of the hotel restaurant is gorgeous. Set under a twenty year old kiwi fruit tree that spreads its leaves and branches across the courtyard and offers diners welcome shade. Lit with magical and ambient lighting at night it was a really wonderful setting for our meal. The host and owner was really friendly and welcoming and showed us to our table whilst explaining the menu choises and recommending excellent wines, all of which were localy produced. We had a set menu which was 45 euros a head so not cheap but having said that the food was worth every penny. Starters including fois gras and salmon were excellent and the main courses of steak with an anchovy sauce, raviolli stuffed with truffles and baked cod were mouth wateringly good. Deserts were also fantastic including a wonderful rum baba and a to die for chocolate tart. This was such a great evening, we felt really spoilt and in such wonderful settings it was hard not to be impressed. Anyone eating here I would think would have a great time. Do look out for ir if you are in the area.

This was a tip from a local expat who was in the restaurant trade himself before selling up and moving to the region ten years ago - and could hardly have been better. We stayed two nights in fabulous rooms, using it as a base to explore the Corbieres wineries, and make the early morning obligatory dash to Carcassone (around 40 minutes but through stunning countryside). The owners are friendly and helpful, the restaurant and food was superb - we thought we'd get cheaper and better in the nearby town of Saint Pierre, but Le Fargo was actually the best we found - its a place we'll happily recommend to friends. Infinity pool a bit small for the kids, ours were teenagers but little ones might find it a bit limited.

Room Tip: rooms of varying prices reflect proximity to the pool but little difference.

We were looking for peace, privacy, nice areas for lounging/sunbathing/reading, good swimming facilities, and a restaurant where you can eat well. A place with clean, functional bedrooms. Efficient and friendly service, but not intrusive. A place for couples, preferably with no kids.

La Fargo succeeded on every aspect. The hotel is located 5 minutes walk from the sleepy village and set in the most wonderful position with stunning views all around. We chose a room (not the most expensive) which had its own patio area which leads into nice (large) grassy area equipped with loungers and seats and some trees for dappled shade if you need it. The pool is great - and has an infinity feature that lets you see the superb view (while burning off some calories !). The room was large, uncluttered and clean....a separate wet shower area and separate toilet area...and plenty of room for bags and belongings.

Dinner was great: pre-meal drinks of sparkling wine from nearby Limoux and local olives, taken in the evening sun on the terrace, followed by either a set meal (approx. 30 euros excluding wine) or a la carte. Judging by our two night stay, the chef doesn't go in for 'big, rich' sauces. He does use the produce from the hotels own vegetable garden and he seeks to provide some interesting dishes with ingredients that go beyond the normal French fare (Smoked salmon and wasabi for instance), alongside some more classic dishes. What was really nice was to get advice for the owner in selecting the wine for the meal. He doesn't just know about the wine, he knows intimately about it: because most choices on the wine list are produced by the people he knows, in the local area. He won't simply point you to the most expensive - he will give you some recommendations (in perfect English) based upon what you have chosen to eat that evening. We must have eaten in hundreds of places over many years....and despite being seasoned wine drinkers, we are still not expert at matching wine to the food. This problem was totally solved at La Fargo !

Overall, we rated La Fargo four stars out of five, simply because it is such a good place to relax in, if the weather is good, you may simply want to stay here throughout the whole day...but there are no facilities for eating midday. (And, as in most places in this part of the world, no tea/coffee facilities in the bedroom). You can get a hot or cold drink at the bar, but no food is available in the middle of the day on weekdays. To be fair, this is a Bed and Breakfast place, and they don't claim to offer anything midday. But the village has no shops, so if you want to eat, you need to go to Lagrasse - where there is a nice boulangerie/patisserie.
