The Cowboy features Caribbean and other island-centric food from around the world, some of it a fine fusion of cuisines that work well together. For example, my wife loved her jerk chicken spring rolls, split lengthwise and spiced to a fiery turn. I took the "island-hopping" one-night-only special that night, a menu featuring Middle Eastern spices in a dish of ground lamb, eggplant and potato that featured some of the most flavorful lamb I've ever had. We really enjoyed it.
