We stayed in Paradise Valley for a month so the Chop House was a convenient location at 20 min by car (on the way to Bozeman). We mostly tried the burger, steaks and ribs (since we don't often eat these at home) and every time were perfectly cooked with a BBQ flavour that was great. My rib-eye steaks were cooked medium well done but were juicy and delicious and had that "melt in your mouth" factor.
The thing that gives the Chop House the edge is that the steak comes on a hot sizzling plate and so even if it takes 30 min to finish, last bite is still warm.
We liked it so much that on our trip to Cody, WY we stopped at the Wyoming Rib and Chop House - the food was excellent - again our expectations were met.
We were served by different waitresses every time and yet the service was friendly, fast and not too intrusive (for US standard), though we mainly ate lunch and tried to get there at times when it wasn't too busy.
Pleasantly suprised by the restaurant decor, expected some bomb but it turned out to be clean, spacious and with the right amount of rustic.
