I took the half day walking tour (I believe it's called "Front Street and Beyond") in July. It was the most fun I had on an overall great trip. I have been to Traverse City but am by no means an expert. I had no idea of all the great food finds available.
The tour basically takes you to a number of local stops where you can sample foods ranging from chocolate to sausage to beer. I imagine you could eventually track all these places down and visit them yourself, but the tour is a great way to visit a lot of great places in a short period of time. In addition, besides just the tastings, someone at each stop (often the owner or manager) will talk to you about the food. This varies from place to place, and could range from a discussion of how cherries are made into wine to the merits of adding chili peppers to chocolate.
Lisa, our tour guide, was very knowledgeable and a blast to hang out with. I would definitely recommend the tour, and can't wait to go back to Traverse City and take the full day driving version.
