I agree with the raves. The recommendations for the gumbo are spot on. I have had it three times and it was perfect each time. It was made with file, but the owner told me they were getting fresh okra and would use that for thickening. I can't see how it can be better, but I look forward to finding out. I also agree that the salmon salad is beautifully prepared. There is enough salmon on the plate to be a normal main dish, so a cup of the gumbo and the salmon salad should suffice for dinner. I have also had the pork chop, which was imaginatively prepared and served with a very tasty garnish. I thought the pork was a bit underdone, but the owner explained that it is preference to serve it a little on the rare side, not sloppy cooking. I suppose one could ask for it to be fired a little more than they usually do, The two desserts I had were also special. The cheesecake is made with whipped cheese, so it is light and fluffy. If you want something thicker, I recommend the key lime cake, which is decadently rich and creamy and very flavorful.
Service is excellent, with a very friendly staff and owner, who tries to make sure all his guests are comfortable and at home.
This is my new favorite restaurant in Statesboro.
