I have been driving past Aqua Blue since it opened. Last night my family and I were stumped for a place to have dinner and we decided it was time to try Aqua Blue. What a pleasant surprise it turned out to be. Very attentive service, which is something of rarity in Roswell. Quite hip decor. But it was the food that blew us away. Conventional wisdom says to be wary of seafood on a Sunday night since the restaurant likely received its last delivery of fresh fish the previous Friday morning. Aqua Blue seems to run counter to this notion. I had one of the specials -- steamed white tuna -- my wife had another special -- beer-battered haddock. Both were spot on in their presentation and taste. I had garlic sauteed spinich as a side and, while it was good, it was not a 10. Terrific cheese plate for an appetizer. In fact the list of appetizers alone will bring me back so I can try more. The wine list, though, is uninspring. The one regret for the evening is that I've never taken time to dine at Aqua Blue before this.
