I have stayed at Disney's Caribbean Beach Resort seven times, the first when I was a kid on my first trip to Disney in 1992, and most recently in February 2006 for an extended family trip to celebrate my sister-in-law's 30th birthday. We love this hotel and have stayed here on almost every Disney trip, since it is fun, familiar, and moderately priced.
The Caribbean Beach is a large hotel (about 2,000 rooms) with a Caribbean island theme. Every Disney hotel has a theme, but don't expect lots of Disney cartoon characters all over the place - hotel decor fits more with the "theme" than with anything specifically Disney. The hotel consists of six "villages", each having 3-6 individual buildings all clustered together having the same color scheme, and named after a Caribbean island: Martinique, Trinidad North, Trinidad South, Jamaica, Aruba, Barbados. These "villages" are all clustered around a large man-made lake. Each "village" has its own swimming pool, ice machines, and a beach area on the hotel's lake. Each "village" also has its own bus stop for the Disney buses that transport you to the theme parks, since the hotel is quite large. Buses going to the Caribbean Beach will stop at each stop at the resort to pick up or drop of park-goers before going to its destination.
The hotel buildings are two stories tall and all rooms open to the outside. There are no elevators, only stairs, to the second floor rooms. Rooms are clean, and room amenities are fairly standard for a typical two or three star chain hotel in the US. Sometimes the maids will have fun when cleaning your room, such as making animals out of the towels or setting up stuffed animals as if they were playing a card game or watching TV. Fun "extras" like that are common everywhere at Disney World and part of why I love staying at a Disney hotel.
Old Port Royale is the common area of the hotel, a "village" of its own located between Martinique and Trinidad North. It contains a large food court with a variety of food options, a sit-down bar/restaurant, a gift shop, an arcade, a larger pool with a water slide along with a hot tub, and a marina for renting boats to take out on the lake or surrey bikes to ride around the resort (the last two are very fun if you have the time/money). As with all Disney resorts, you can buy a mug at the start of your trip that offers free unlimited refills of soda and coffee from the cafeteria, which is well worth it if you plan to drink a lot of those beverages.
I have stayed at three of the "villages": Trinidad South, Barbados, and Martinique. The rooms and amenities are the same at each "village", but I highly recommend staying at either Martinique or Trinidad North, due to the close proximity to Old Port Royale. I think they now charge more for these rooms, but it is worth the extra money, unless you don't mind a long walk to and from Old Port Royale. I think they also run an internal resort shuttle if you don't stay close to Old Port Royale and don't care to walk that far.
One thing I HIGHLY recommend is to stay at a Disney resort if you are primarily visiting Walt Disney World. It is well worth it to hop on a bus right outside your hotel to visit any of the theme parks or Disney attractions. The hotel staff at Disney resorts are very friendly and sometimes do little things to make your stay "magical"; it completes the whole fun of going to Disney in the first place. If money is of concern, the "value" resorts (Pop Century, All-Stars) are very reasonably priced, and you won't get a decrease in quality or miss out on the Disney "magic". I stayed at the Pop Century once, and although I like the Caribbean Beach a little better, I still thought it was a perfectly fine place to stay.
