I have been to sooooo many " authentic " mexican restaurants and I always get beef enchiladas with the regular red sauce that comes pretty standard at every mexican place. At El Jefe the "red" sauce was so dark it was almost the color of chocolate. I even asked the waiter are you sure this is the red sauce?? My husband said it best when he said it tasted like burnt ketchup. It was totally inedible. I also did not like the salsa with the chips too much it was very spicy and smokey Im guessing too much chipotle pepper. But my husbands fajitas were great moist and so flavorful, I ate his rice it was very moist i liked it but couldnt bring myself to eat the beans they had a stinky cheese on top. Sad that the restaurant did not comp the enchiladas it was a $14 dish and i didnt even eat one bite. I explained to the waiter that this wasn't the normal red sauce i was used too and he was like thats the red sauce thats what you asked for. He said i was the first person to complain about the sauce.
