Description: Opened in December 1999, in Vail, Colorado, Larkspur features the modern technique and preparation of American classics. An evolution in refinement, Chef /Owner Thomas Salamunovich approaches his craft in the same manner he approaches his guests: with a fresh eye and a nurturing spirit. With 10,000 square feet of restaurant space, distinctly different areas have been created to accommodate the preference of all patrons. The restaurant is warm and polished with an open kitchen, massive hearth, and a 5,000 bottle transparent wine cellar, serving as the centerpiece of the main dining room.

“Overrated! Overpriced! Underfed!”

Larkspur is a restaurant where location, reputation and service do not begin to make up for the quality and quantity of food. The atmosphere is loud, and our party of two was seated at a table meant for six. The menu was uninspiring. The red wine was warmed. My husband's scallop main dish was appetizer sized - four quarter sized scallops , with two limp spears of asparagus. We visited several restaurants in Vail - including LaTour, Campo de Fiori, Sweet Basil, La Bottega, and Up the Creekand - found all of them vastly superior to Larkspur.

“Well prepared meal, Overpriced Wine List and Mediocre service”

Having read the reviews before going, I felt that the criticism may have been overinflated,
The restaurant was well appointed and the hostess was friendly and cordial. The food was excellent and worth the price ( Kudos to the chef and his kitchen staff). There was however some significant flaws in the overall experience there. The wine list was overpriced (sometimes ~3x's retail) and finding a reasonably priced($100) bottle was a challenge. The extensive waite staff was disorganized and looked unkept in their uniforms. They all seemed to be very busy but not accomplishing much. We had to for the most part, pour our own bottle of wine. The management should take more pride and spend some time in training their staff so that it becomes a restaurant that delivers service to match a top kitchen.

My wife and I ate in the bar on a recent Saturday night. I was not overwhelmed with the meal or the service. I had the rack of lamb and my wife had the skatefish. The side dish we ordered arrived after we had already finished half our meal. The meal was Ok but not worth the high price of the meal. The lamb was well cooked but lacked flavor and my wie was not overwhelmed by the fish dish.

Was lucky enough to make it to all the top rated restaurants over our weekend and Larkspur got out top vote - room location, amazing, unique food and presentation - was a great dining experience.

“Memorable dining”

Our family ate here on Christmas night and had a delicious meal, served by a very knowledgeable and attentive staff. Everything we ordered was spectacular - appetizers, entrees to desserts. We ate at other known restaurants in Vail the following week and our family all agreed Larkspur was by far the best!
