Description: Opened in December 1999, in Vail, Colorado, Larkspur features the modern technique and preparation of American classics. An evolution in refinement, Chef /Owner Thomas Salamunovich approaches his craft in the same manner he approaches his guests: with a fresh eye and a nurturing spirit. With 10,000 square feet of restaurant space, distinctly different areas have been created to accommodate the preference of all patrons. The restaurant is warm and polished with an open kitchen, massive hearth, and a 5,000 bottle transparent wine cellar, serving as the centerpiece of the main dining room.

“Wonderful for large groups!”

We had a very large group go to dinner here for our last night together, and in the next room over there was also a wedding party. The staff was wonderful and took care of everyone fantastically. Our servers were so friendly and attentive, and the food was fantastic!

The shrimp polenta appetizer is AMAZING, and the Larkburger was perfectly cooked. The bathrooms were very clean, and there was a nice sitting area for some quiet chatting and privacy if necessary.

“Terrific value 3-course dinner”

Right now this restaurant is offering a specially priced meal for $39 per person ... plus 25% off a bottle of wine (up to $100). There is a good selection of choices. We enjoyed oysters Rockefeller served on bacon jam, slightly curried swordfish over a selection of beans, and a 2-course artisanal cheese plate. Truly a delicious meal from beginning to end.

“Horrible attitude!”

Totally the wrong attitude. A large group of us booked out this restaurant early one evening. There were approximately 200 of us and they did a running buffet of meat, fish etc. There was nothing wrong with the food. However, there was nothing particularly impressive about it either. We had heard a lot of recommendations for this restaurant before we went to Vail and had been looking forward to dining there. We had a teenage son who took some fillet of beef from the buffet but it was decidedly rare when he cut it open. He loves beef but will not eat it rare and likes it well done. We asked the waiter would he mind bringing it back and having it cooked more in the restaurant explaining to him that our son did not like eating rare beef. He hesitated as if frightened by the request and said he would enquire! He then came back to say “sorry – the kitchen cannot accommodate your request”. At this stage the “chefs” in the kitchen which is open to the dining area – were idling around, all of the food having been cooked and put on display. It was perfectly clear that this restaurant (and particularly the chefs) have an attitude and it is certainly the wrong one. The customer comes last here and the chef comes first. It seemed to us that they preferred to satisfy their own egos even at the cost of spoiling the dining experience for a young man. We will never go back here and will certainly not recommend it to friends. Just a dreadful experience.

“Great Creative Food”

The food was extremely good and creative. There weren't a lot of people in Vail when we were there, and the restaurant wasn't very busy, but we enjoyed everything we had.

“First Time Charming”

Very nice first dining experience. Small but very interesting and eclectic menu well prepared. Must try gazpacho - better called lump crab with a bit of gaz - enlighten to share. Veal piccata and ravioli with shrimp unique and delicious. Staff could not have been nicer or more helpful. Extensive wine list but pricey. Environment just ok - less intimate than other top end places in town.
