I've always wondered why the true BBQ people were so into smoked ribs with sauce only on the side. All the ribs i've ever had have been not very meaty, and you spend more time fighting the bone than eating. Not worth the effort in my book. The Rib House in Longmont, CO completely changed my mind. The meat is nothing short of amazing - smoky, tender, falling off the bone, and LOTS of it. They always have a nice crust and the smoky flavor permeates the entire slab of meat. The sides are great too, I recommend the mashed potatoes and beans, and for the kids or an appetizer the fried macaroni/cheese triangles are simply incredible... like a nacho cheese chip x1000 in flavor. The staff is friendly, the service is great (free sauce refills, for example) and the food is some of the best I've had, ever. It's located in the heart of the funky "Prospect" community as well, which is a fun drive-through sight, especially in the summer. Highly recommended.
