We went to Pablo's for lunch today upon the recommendation of our innkeepers. It was a perfect spot. It's a cute, main street store front. Casual and very pizzeria-y. Order at the counter, they'll bring your food to the table, please leave your plates and glasses on the side. But this is how a pizzeria should be. We ordered a single size salad (plenty for TWO) and two slices. Being from the New York area, we are very spoiled with superb pizza, and were a little skeptical about Colorado's take on such a classic. We were pleasantly surprised. The crispy crust was thin enough but substantive, the toppings were generous, and the sauce was plentiful wtihout being overpowering. Maybe a little more spice in the sauce, but that's personal. Salad was deliciious, nice additions and dressing on the side (always appreciated). I see a poor review below referring to the pizza being reheated, and i have to assume this is an individual that's never been to an authentic pizzeria. If you order by the slice, they are going to cut off an already made pie. If you order by the pie, they'll make a fresh one. C'mon. Good spot. Good food. Nice people watching. Go there. Yummy.
