I ate at Watercourse several times back in 2007 and 2008 and loved its quirky vegan/vegetarian fare. Returned there in January 2012 to find it tired and not as good. Our server, Luke was very friendly, but forgetful. We'd ask for something and he'd come back only part of what we asked for. The eggs benedict was served on polenta, rather than bread, and the "hollandaise" was a mixture of curry and mustard and quite bizarre. Our daughter ordered pancakes and received pumpkin flower pancakes. We weren't told they only had pumpkin batter. Many of the yuppies and young couples with small children who packed the place ate ravenously, clearly enamored of the vegan and vegetarian fare. It was akin to everyone going to a certain nightclub because it's the place to be seen, even if the club isn't that great anymore. That's kind of what Watercourse felt like. The folks behind this venture need to revitalize and reinvigorate the mission of this restaurant. It's become rather dreary, and it was once one of the best places to eat in Denver.
