Home-made tortillas to die for -- made right in front of you. Fresh fillings and a habanero salsa that is full of flavor, not to mention heat. Worth the drive, worth the wait, worth coming back for! We went to the Echo Park location. At 8:30 pm on a Saturday night we didn't have much problem finding street parking. The line was not that sizeable and moved along at a steady pace. You order at the counter. Although tempted to try the sampler of tiny tacos (the tortillas look to be about 3" in diameter), we opted for the Tinga, Cochinita Pibil, and Calabacitas ("little squash", in this case, zucchini). All great but I loved the Tinga and the Cochinita Pibil (a classic pork dish from Yucatan; achiote gives it the deep red color). The squash filling was pleasant but didn't stand out with any particularly interesting flavors. Sit on the patio in the back if you can find a seat. A festive ambiance. We couldn't find patio seating and sat in the adjacent indoor room, which is spare and could use a bit more decoration -- especially since Guisados is drawing a crowd and more people will find themselves sitting in this space. A guy, who seemed to be manager (or possibly the owner) came over to check on us. Very amiable and knowledgeable about the food; and clearly proud of the place and wanting to ensure that customers were happy. The aqua frescas are fantastic!!
