Aqua Shi in Fresno, California opened two weeks ago and I was fortunate to snag a reservation to one of the opening nights. Located at the northeast corner of Champlain and Perrin in North Fresno, you can't see the restaurant from the street but it is under the clock tower... and the remodeled location is snazzy, a lot of effort was put into the decor and this carried over to the dining experience. There is a bar with a glass top and fish swimming under your cocktail... there is a plexiglass divider with sheets of flowing water dividing the bar area from the main dining area. There is even a wall decorated with tree limbs appearing to grow into the framework. The food was sophisticated and everything was so fresh. An eclectic sushi selection is available and the large plate entrees were superb. My group tried preparations of braised pork, grilled beef and even a plate with homemade gnocchi. There was a sinful dessert choice of fried bananas or lemon bars to finish off a delightful evening. Very impressive for a startup week.
