You would choose to come to the Hotel Dagmar because you think it's enchanting to stay in a period piece that's right in the center of Ribe. If you want modernity and a swimming pool, for instance, stay somewhere else.
However, I have not been to a hotel anywhere that has easier, faster and cheaper (it's free) access to wifi. It's on. It's fast. It's in the whole hotel. Literally, you are there in a place with seriously sloping floors (a hard boiled egg at breakfast rolled off our table) but you've got a 21st century lifeline.
Hotel Dagmar is an absolute pearl. The hotel oozes with charm, history and personality. You will be so enchanted with the place (and we haven't gotten to the food yet) that you really should just blur your focus a bit when using the bathrooms which are old (old in the outdated sense, not in the enchanted sense).
But anyhoo... your focus is on the enchanting surroundings and the really, truly wonderful food. We stayed for two nights in mid-May. The first night, we ate in the cellar restaurant and the second night, we ate in the formal restaurant (but this is Denmark so, keep in mind that formality here is choosing the jeans with the crease in them). We were so surprised and delighted by the quality of the food. The cellar served us a salmon appetizer that I am still thinking about now. The wine list in the cellar is relatively limited although sturdy. The wine list and the knowledge of wine that our waiter had in the upstairs dining room was impressive. It's not a huge list but, it's really interesting and really good.
The hotel seems to attract an older crowd. We are in our mid-40s and when we left the dining room, the average age sky-rocketed towards assisted-living age.
I would (and will) easily stay at Hotel Dagmar again. This is a wonderful place.
