On a recent trip to Phoenix, we ate at Carolina's not once but twice because my daughter loved the crispy tacos! The servings are very generous. Between our visits, we ordered Oaxaca Special (Beef chorizo w/beans, potatoes and cheese), burros (burritos), flautas, chimichangas and the famous flour tortillas that are HUGE! Our first visit was on a week day evening and my 10 year old daughter decided she wanted another taco (after eating two of them). She waited in the line for awhile and then got out of line to come back to the table. We urged her to go back to the line and one of the teenage workers who was clearing off tables asked us what she needed. Upon hearing that she wanted another taco, he told the kitchen staff he needed a taco and he gave it to her! We tried to pay for it before leaving but they told us it was "on the house". Our 2nd visit at lunch during the same week was just as awesome. Lunch time included more office workers;it is more laid back for dinner. Oh, you won't go thirsty--they have more soda choices than I have ever seen and the drinks (w/free refill) were only $1.15!

Carolinas has two locations now. I went to the north one at 2126 East Cactus Road, Phoenix, tonight and had their Chimichanga with Guacamole. It was delicioius, perfectly prepared, and came with homemade hot sauce on the side, plastic ware, napkins, and I bought two extra flour tortillas as well, since everyone on Tripadvisor has raved about them. My total bill came to about $8 (without a soft drink) and the meal was well packed for take out. The restaurant itself is nothing to speak of--typical store front diner type seating for about 30 folks--but you cannot go wrong with the food as far as I could tell. It was freshly prepared, tasty, the establishment seemed clean, and it was a kick seeing the tortillas being made by hand in the back kitchen, visible from the restaurant. Tacos cost about $1.60, Enchiladas about the same, they have Tamales, Tostadas, and Burros. The menu did not include Fajitas. The customers was a lovely mix of Hispanics and Anglos. I give it 5 stars for a fun family meal.
