Carolinas has two locations now. I went to the north one at 2126 East Cactus Road, Phoenix, tonight and had their Chimichanga with Guacamole. It was delicioius, perfectly prepared, and came with homemade hot sauce on the side, plastic ware, napkins, and I bought two extra flour tortillas as well, since everyone on Tripadvisor has raved about them. My total bill came to about $8 (without a soft drink) and the meal was well packed for take out. The restaurant itself is nothing to speak of--typical store front diner type seating for about 30 folks--but you cannot go wrong with the food as far as I could tell. It was freshly prepared, tasty, the establishment seemed clean, and it was a kick seeing the tortillas being made by hand in the back kitchen, visible from the restaurant. Tacos cost about $1.60, Enchiladas about the same, they have Tamales, Tostadas, and Burros. The menu did not include Fajitas. The customers was a lovely mix of Hispanics and Anglos. I give it 5 stars for a fun family meal.
