Eight of us spent Christmas week at Punta Uva (2013). One of our highlights of our stay was horseback riding with Caribe Horse Riding Club. The trip was booked online without realizing the club ranch was near the houses we rented. The trip started with an included shuttle service (taxi). Since the owner was taking time off for her newborn baby, Sandra (manager, a video producer from Holland) and Kristen (volunteer from US.) took 5 of us for a long ride in the woods and on the beach. Both of them were very nice and knowledgeable, especially Sandra. Some of us were experienced riders, others were beginners. We all truly enjoyed this ride. I personally have had horseback riding in the canyons/deserts/mountains and on the beach/island before. This one has to be one of the best. I highly recommend this trip.
In addition, like many places in Punta Uva, the club has no address. If you Google map search "Caribe Horse Riding Club, Costa Rica" or use GPS Coordinates: 9.632971, -82.680590, you'll find the location. "El Refugio Restaurant" mentioned in the direction to the club is called El Refugio Grill. It offers very nice Argentinian food for dinner only. But it's on the fancy and expensive side (C130,000/8 people) based on local standard.
In addition, since you are in the area, there is an excellent snorkeling site nearby (GPS coordinates: 9.643077, -82.687999) with a 5 feet underwater coral (on the edge of shallow side of reef line) and reefs with many colorful fish. A hike up to Punta Uva (9.640861, -82.693085) is also nice.
