While I was in Shanghai for a couple of months, I kept going back to Nadaman because they always served up mind-blowingly good sushi.
Sit at the counter and have a chat with the chef - he'll recommend you the freshest fish brought in that day, and how we should order it - sashimi or maybe seared. Highlights for me would be the Aburi Toro, Tamago, Seared Wagyu Sushi, Scallops - both seared and fresh. Writing this now makes me wish I could go back there right now!!
