“The best biriyani in Kolkata!”
5 of 5 stars Reviewed July 26, 2012

A very contentious topic in Kolkata is food.
Food lovers swear by their favourite joints and very often, this becomes a topic for a heated argument.
One such food item which is very controversial in terms of "where to get the best" is "BIRIYANI".
Kolkata's biriyani is different from its Lucknowi or Hyderabadi cousins!
But as a hard-core food addict, I swear by Kolkata's Biriyani to be the tastiest amongst the 3 cousins.
Blame it on my palate or partiality towards Kolkata - but for biriyani, I would rather wait for a seat at Shiraz than at Abid's (Hyderabad).
Shiraz - yes - you heard it right!!
I know many Calcuttans would immediately think of some of its closest competitors being better that Shiraz - but I vote for Shiraz!!
The rice used in Shiraz's biriyani is slender, smooth and unbroken!!
Thats a plus point for Biriyani - rice quality!!
And then when you take a spoonful of its mutton or chicken biriyani, it almost melts in your mouth!!
Legend has it that biriyani was never made with chicken - only recently has the nouveu Bong demanded the "lesser evil" chicken over mutton - and hence we have chicken biriyani.
However, if one wants to commit the cardinal sin at Shiraz, order a plate of mutton tikia and you will know why!!
The dripping oil and deep red mutton tikia makes any mouth watery - except when you come to know that this tikia is made from the "chhaant" of mutton - or rather the unwanted meat of mutton slices after the better pieces have gone into biriyani and other princely dishes of Shiraz!!
All said and done, the mutton tikia is one of my favourites at Shiraz!! No one makes it as rich and as sinful as Shiraz does it!!
My menu at Shiraz - Mutton biriyani, mutton tikia and Firni!!
Oops - forgot about the dessert - Firni!!
One saucer (yes - its served in earthen saucers) is not enough for the sweet tooth!!
Atleast have 2!!
And while coming back home, pick up a bottle of "Thums Up or another fizzing cola" or "Digestive tabs" for the immediate effect from heaviness that follows from a biriyani meal!!
But when in Kolkata - do visit Shiraz once atleast - you will enjoy the meal - thats my promise to you!

“Great, but not too often!”
5 of 5 stars Reviewed July 16, 2012

So difficult to rate this place! Shiraj is close to every Bengali's heart, almost a part of Kolkatan existence. Biriyani is mouth watering (who bothers about the authenticity), mutton chaap is the best you will ever eat and the price is less than you will expect. All the dishes are super tasty. On the flip side, I won't like to have a sit down dinner with any of my guests, the ambiance being in question, and the cooking is really really unhealthy for your coronaries (I am a Cardiologist!) So, all depends on your take. If you ask me, use their ultra fast takeaway service, sit down at home and dive into the gastronomic vice, as long as you do not indulge in it too often!
Taking the taste and the service into consideration, I shall give it a 5/5 for a one off visit.

“All time favorite”

The taste of the Biryani still lingers, its delicate flavors and generous helping. I have never visited Kolkata without eating at Shiraj.

“That's not biryani”
1 of 5 stars Reviewed June 28, 2012

Went there as many recommended them for Biryani.

Once there, I tried to find out if they serve boneless biryani. Answer could have been 'NO' instead the waiter went on to claim that "Nowhere in the world you will find boneless biryani".

The biryani was nothing but medium quality white rice boiled cardamom and black pepper. The chicken was lighly fried with a rare hint of spices.

This was not what one expects of an Indian Biryani.

Pricing is of a highend restaurant. This does not justify the ambience, staff attitude and food quality.
