“The Best Meal I Didn't Cook Myself of the whole trip! (And probably better than those too!)”
This is definitely authentic Thai food served in a Carribean setting. The food was rich with coconut milk and spices and delicate in the application at the same time! Wether it was Ginger Lobster or Sweet and Sour chicken(more on this dish in a second) the cooks did not caper for your tourist enjoyment, they made food you would be happy to get anywhere on the planet. Paired with a Honduran Salva Vida, or in my case the most appropriate Cuba Libre ever made outside of Cuba, eaten under the canopy open to the breezes and right on the water it was an extremely happy experience for all. Even my stepdaughter who tried to get the traditional "copout" of Sweet and Sour Chicken discovered that these artisans were unwilling to defile an animal who gave its life for us with corn starch thickened goo. She got a plate with Nicely cooked strips of chicken, al dente vegetables, a sauce that was both sweet and sour but did not come out of a can (or look like watered down cocktail sauce) and a side of rice. I definitely was glad to have spent the evening there with my family and friends. Oh, the power was out so they couldn't make blended drinks (unless you are just dying to try it pass on the monkey lalas). I barely noticed. Oh yeah, our meal was cooked by lamplight.
