Stayed 5 nights at the Datai in mid May 2009 and thoroughly enjoyed it.
We had a Deluxe room and the resort was pretty quiet. The rooms are superb and my husband loved the library - saved him reading all his books in the first few days of our 4 week holiday!
The food is not as expensive as you would think - it is relative to local prices but in on a par with mid/ upper range meals and drinks in a big UK city - we managed on about 100 GBP per day and we were drinking cocktails everyday and had a three course meal with wine 4 nights out of 5.
The spa treatments are definitely top end prices, but when you are led to your private treatment room with actual animal/ sea sounds to sooth your worries away, you can begin to appreciate why. So much better than the piped music you would get anywhere else.
WIldlife is superb - and nature walk is good, we regret not doing the mangrove tour - my tip would be to book yourself on all the tours you think you may want to do on day 1 - otherwise you end up too fond of your lounger on the beach!
My one gripe was the service which was variable, for instance:
On check in we received a warm and professional welcome - on check out we were delayed by about 10 minutes while the staff slowly corrected an error on our bill - despite me expressly requedsting it to be fixed 30 minutes earlier, they did not attend to it until it was time to pay.
On the beach and by the pool some days we received endless unrequested iced water and cold towels and other days we had to chase the pool boys for even a towel to sit on.
Finally the car to the airport cost 50% more than the one we took from the airport - to be expected from an establishment like this but annoying nonetheless.
Overall I consider these examples to be small picky gripes and would not hesitate to go back again.
