The cooking school is new (about 1 year old) and has been really well designed to maximize the your understanding of Vietnamese cuisine. The day starts with breakfast in the cooking school restaurant, then the 25 or so people are split into smaller groups of five or six for the market tour. At the market your shown everything; fish, noodles, meat, herbs, fruit, vegetables and spices. Our guide, Thu, was excellent and gave us some good tips on what to look for when buying some of the key ingredients. When we got back to the cooking school, still in small groups, we were toured around the cooking school restaurant were we tasted lots of things (silkworm salad to steamed coconut pudding) told the importance of some of the dishes to local culture, and saw how everything was prepared. Then on to the actual cooking. Lulu was our cooking instructor and she was excellent. We cooked, and ate, four delicious dishes. At the end we were given the recipes and a slicer (kinda like a hand held mandolin). I cannot recommend this cooking class highly enough!
