On my visit last Jan. to Siem Reap. We took a 3 hour ride through the rice fields and it was one of the highlights of our trip. It was my girlfiends first time on a horse and she had no problems getting used to riding with some instructions from our guide. The horses are great, although the horse I got was said he liked to roll in the sand if he had a chance and well, he found his chance and almost caught me off guard. I was able to get my feet out of the stirrups in time and jumped off as he started to roll. The guide helped me get the horse back up and he was fine from that point on. I was a advance rider(Pole bending), so make sure you know your own skills and let them know so that you can get a horse for your level.
The path was beyond awsome winding through houses and rice fields and a little canal. little kids waving and everyone we met along the way were very friendly. I would also recommend that if you never been on a horse, stick to a short trail ride, your legs and butt will thank you the next day. You will be SORE, but all so worth it.
