After several days of eating Cambodian food prepared for tourists, our guide suggested the Khmer Kitchen and told us how it started out (years a go) as a two table establishment. It is cafe style and has expanded to two shopfronts with really great food and at least 8 waiting staff the evening we visited. We had the two traditional Cambodian dishes - fish amok and khmer curry (items 1 & 2 on the menu). The mains were $4, heaps to eat and the flavors were the best we found in Siem Reap. It is opposite the old market - Recommended!
