“Superb Japanese Peruvian Fusion Restaurant”

The rating in Trip Advisor was spot on with this restaurant. The service was excellent . Their is a traditional menu and Japanese menu. We had some great fried dumpling and rib beef starters and then went onto 2 great beef dishes. The 4 homemade ice cream sampler shared by 2 was unusual and wonderful. Carlos Sánchez/Maitre was extremely helpful. When questioning about a sauce served with our beef dished the server brought one of the peppers out to show us what kind of pepper was used in making the sauce. This restaurant is worth a return visit. The sushi looked amazing.

“Japanese-Peruvian fusion that is terrific”

The restaurant weds two wonderful cuisines and they do a great job. It is easily accessible in Miraflores and the service and welcome were excellent. I sat at the sushi bar which is always fun, and loved everything I ordered.

“You cannot miss this place if you have any interest in Japanese food”

Unless you are strictly conservative as to what Japanese food should be, visiting Maido is a must. Maido creates 'Nikkei' dishes, their word for Peruvian-Japanese fusion, and it is phenomenal. Many have mentioned the nikkei tasting menu, but I instead went for their nigiri menu, which is still a great way to taste the japanese-peruvian fusion, within a fixed set of japanese borders, unlike the other menu which can be almost anything they can think of. The nigiri menu comprises 19 different pieces of sushi, with the choice to repeat your favorite at #20. The methods of 'fusion' can range from using unusual fish and seafood in more traditional ways, using peruvian sauces, using bizarre ingredients (like a highland algae that absorbs any liquid, and using the 'leche de tigre' or ceviche juice as that liquid, to create little spiced-citric bubbles), or using japanese sauces on unexpected nigiri 'toppings', like eel sauce on foie gras. Each piece of nigiri is carefully presented, served, and explained, to point out what is peruvian or what the intention of the creation is, and while 19 pieces seem like quite a bit of variety, their menu (seems ) to change often enough that a return visit, after some time, would yield completely different bits of sushi. Not one to limit myself to the menu, I also ordered a mini-burger, or slider, of roast pig, which also in the spirit of fusion is served in what is much closer to a Singaporean Hot Pork Bun rather than a mini-hamburger bun. Top top stuff, with everything else, service, atmosphere, etc., to match.

definitely an experience to remember...sit at the sushi bar and let the chef feed you whatever he pleases...melt in your mouth delicacies, the best so far I have had in Peru
