I have eaten at this restaurant many times. I first met the chef and owner the day before his restaurant opened, and have been to Don Colon's many times since. I have had meals with a range of prices, from his inexpensive almuerzo lunch to some of the more elegant menu choices for dinner. When lobster is back in season (in June) his seafood platter for two is a dish to enjoy and remember! And it is pretty to look at as well. He has filet mignon all the time, and that is another good menu choice. He also serves salads. His favorite appetizer is the fried zucchini which is quite good.And then there is his company. He is a native Ecuadorian, so he can speak with ease to his many Ecuadorian customers. But he lived and worked in the United States for many years, working his way up from providing room service to owning and operating his own restaurant. He has also owned restaurants in Cancun and in Quito. But he is now in Cuenca to stay, and we are all the more fortunate because of it. Let him know if you have a request, or want to have a party at his restaurant. The setting is attractive and convenient (just three blocks from Plaza Calderon). And if you have questions about Ecuador, just ask the chef!
