Rule number one...chef-owned restaurants need to succeed, therefore they cannot afford to fall behind in terms of food and service.
Rule number two...In Singapore where so much is "style over substance" break away and stick to serving good food and providing excellent service. Styles change and "The Crowd" can be fickle!
Rule number three ... You survive on your first customers...you make money from repeat customers.
Pamplemousse achieves my award as the best restaurant in Singapore for an intimate dinner or for a few close friends in an elegant surrounding. Food, service and decor is not fussy but then I HATE fussy. It's not cool, it's not hip but you can take your wife, date or your mother there and all will be happy!
