My daughter and I had a wonderful hike with a guide, Jodi, who is a local cooking teacher (google her website Jodie's Kitchen in Taipei), and also offer guided hikes. She has many options ranging from 1 hour easy trails to our hike which was 4 hours, and moderate effort. The actual hike was 95 Peak, Thumb Mountain and Nangang Peak, which actually overlook Elephant Mountain. Jodi says there are many interconnecting trails and many mountains. The views were great, and so nice to be in the forest and the shade. Even though it was hot and humid, it was still more pleasant than being in the congested city center. We decided on the guided hike as we would be hopelessly lost otherwise. Highly recommend getting out of the traffic and malls and A/C and being in nature, especially as it is only 15 minutes from Taipei 101.
