Description: Head Chef & Owner, Jamey Townsend, follows the modern trend of 'sloe food' where all ingredients are sourced locally within Zambia, or grown organically in his own garden wherever possible. Our methodology ensures fresh seasonal produce that is grown & farmed in a sustainable & humane manner. No pre-processed, canned or tinned produce is used so everything that comes out of the kitchen is 100% traceable to its roots. Ingredients that can not be produced in Zambia such as spices are obtained from local farmers markets. We guarantee that only the highest quality ingredients are used in our cuisine. The menu has a European theme including specials that change on a weekly basis; and new dishes with every new season.

“Delicious Dinner with Friends”
5 of 5 stars Reviewed October 25, 2013

We were seated promptly at wooden tables (perfectly sized for 4 people to eat comfortably, still with space to move around the dining room), drink orders taken and our gaze was directed to the large ‘Starters, Mains and Desserts’ chalkboard which almost completely covers an entire wall of the restaurant.

All ingredients used are fresh, seasonal, local and sustainable, which means available meals change regularly depending on what is in season and available. We were also given a standard menu just in case our desires conformed to the much loved Zambian standards.

The music was just at the right volume, not loud enough that you have to shout and not so quiet that you have to whisper for fear of being overheard.

We opted for a mix of Chalkboard and Paper Menu's. And Jamey (the Chef) took our orders.

Starting off with ‘Hummus with Pita Bread’ and ‘Halloumi with Peppadews’, both starters were delicious. The hummus was perfect, and the pita bread fresh and warm. The halloumi rather than being slathered with sweet chilli sauce came topped with sliced peppadews and a light minty dressing which enhanced the flavours and complemented everything.

We both opted for chicken for our main courses. A chicken, bacon, oregano tomato and mozzarella stack and a chicken, pepperoni and mozzarella stack. Both came with a fresh salad and a choice of chips, wedges etc. Both were cooked to perfection, the chicken was moist and flavourful and everything worked together wonderfully.

The portion sizes are large, I would have been full without a starter, but I was close to bursting at the end. Unfortunately no room for dessert although everything on the menu's sounded scrumptious.

We will definitely be going back, though this time we might have to fast to clear our plates.

Cozy little restaurant hidden right behind the Taj hotel. Very varied locally sourced menu ,everything is fresh and cooked to order. mostly south african dishes with a touch of the Levant.
Very personal service and great experience all-around. Located close to the Taj and the Intercontinental

“Fabulous little hidden secret!”
5 of 5 stars Reviewed September 26, 2013 via mobile

Been to the Four Seasons Bistro twice in a week now, having discovered that it's been open for three months, and the Chef has been creating his great meals for the last two years at Smugglers!

Highly recommended - particularly if you're in a nice size group, and you're looking for some great food and really quite reasonable prices.

Jamey, the Host / Chef, cools everything using local ingredients wherever possible - and the portions are, not to put too fine a point on it, American in size! Don't order extra fries as we did!!

I'm sure he hopes that it doesn't remain a hidden little gem - but at the moment it's quite nice to be able to pop in and still find a table :-)
