everything about this place from the impeccable renovations; the hosts; the food; the location and espcially the views was just magic

Dar Roumana is a very up market B & B in a brilliant position with a fabulous view over Fes & the Medina. Stylish, very comfortable, with public spaces galore, a sitting room with an open fireplace, a must in the winter months; a library, a vcr room, huge roof terrace with different seating areas and a large internal courtyard for which Dars are known for where one can sit under the stars when dining.

And this is where I had the best dinner during my weeks visit to Fez. Sadly I was unable to stay as Dar Roumana was fully booked but after endless disappointing meals elsewhere I was desperate for good food. Thanks to my brilliant personal Guide Hakkim who had steered me through the Medina & the surroundings of Fez for days I was able to get a reservation for Dinner. On arrival I was greeted with open arms by the English chef & the Dutch manager of Dar Roumana. Given a tour of this superb and luxurious Dar, more a boutique hotel than a mere B & B before settling down to a 3 course feast.

Moroccan food is not known for it's variety and I had been suffering from the lack of fresh produce which abounds in the local markets but does not seem to make it into restaurants as such. Finally a meal was served where I was able to taste every morsel for what it was, a delicious fusion of Moroccan tastes with the influence of a real European chef. Bliss. Highly recommended and not to be missed.

The Dar Roumana is an oasis of calm in the chaos of Fes. The property has been lovingly restored and, having stayed in riads in Essaouira and Marrakech, a very fine example of doing things properly but on a small scale. We stayed in one of the ground floor suites facing on to the courtyard and travelling as a three was helped no end by having a two-plus-one room (there's an extra bedroom up the stairs from the main room) which helped to keep costs down on a Morocco tour. Nico and Stephanie were very helpful and gave great assistance in providing an overview of Fes, including what to see, what to avoid and the best places to eat (go and have lunch at Chez Rachid off the Bab Boujeloud - great food and massively entertaining. If he doesn't have what you want, e.g. the awesome mint tea he'll go and get it from someone else!). The riad comes very highliy recommended and the icing on the cake is the little extras like being met at the station by the porter (best of luck trying to find it without him!) and the orientation. Go now!

As an aside, for anyone apprehensive about going to Fes, you shouldn't be. It is a maze and you will get lost but bring a compass and 'go with the flow' and you'll love it - just as we did.

I stayed in Dar Roumana around June 1 2008.

The property itself is lovely - the photos on their website present it fairly and accurately. The rooftop deck (where breakfast is served) offers a panoramic view of the Fez medina.

I stayed in the Argana room, up in the turret. Bed was comfortable and air was fresh. Don't do it if you have mobility problems - the stairs are a bit steep.

Breakfasts were delicious. I did not have one of their dinners. Note that the owner, Jennifer, whose cooking is legendary, is not in residence at the moment. That's not a knock on Stephanie and Nico's cooking -- I simply can't comment on it one way or the other.

Stephanie and Nico are delightful: welcoming and enthusiastic. I was a bit concerned that their youth would equate to a lack of experience, but they seemed well equipped to manage the place, deal with inevitable glitches (low water pressure being the biggest that affected me while I was there), and advise visitors on how to get the most out of Fez.

I have no complaints other than the lack of water during part of the day (apparently a recurrent problem all over the medina), and that, with the current exchange rate, 80 Euros makes the room pricey for Americans. I would certainly recommend the place to anyone.

Our 1st adventure into Morocco started with a 5 hour some what crazy taxie ride from Tangiers to the gates of the Fes Medina. We were greeted by the Dar Roumana managers Niko and Stephanie with homemade cookies and mint tea. They made us feel at home with a tour of the beautiful restored guest house. The Tamarind Suite on the 2nd floor over looking the court yard with high carved ceilings, beautiful tile and cozy bedding become our home for 5 days. We had a wonderful dinner served on the roof top with a 360 degree view of the medina. Breakfast of freshly baked breads, fruits, morrocon coffee and tea were served each morning. The Dar Roumana owners Jennifer and Sebastain took command as Niko and Stephanie left for holiday in Spain. They arranged for us a day with Azidene a a knowledgeable tour guide. The day was spent visiting historical sites and exchanging cultural ideas and no shopping. We took advantage of Jennifer's "Cordon Bleu chef " cooking class.The morning was spent shopping for fresh produce and very fresh chicken. The class was hands on,,sharing cooking tips and lots of laughs. The dinner was fantastic. When returning from the medina the Dar Roumana is truly an " Oasis ". The entire staff was warm and friendly and accomadating to our every need. Jennifer and Sebastain are wonderful hosts. We now have memories which will last a life time. We would reccomend the Dar Roumana to everyone. What an adventure. The" Medina Turtle" is still wandering the court yard...... THANK YOU !

Superb accommodation matched by amazing hospitality.
We decided to treat ourselves and stay here for a night- and it was totally worth splashing out on. This was the standout accommodation on our 5 week trip.

Also took a half day guided tour with El-Hakim which was so informative and an excellent way of getting to know the inner workings of Fez's labryinth medina without having any hassles from shopkeepers. Highly recommended.

The Dar Roumana has been beautifully restored, with tiling, carved wood and plaster everywhere. From the quiet courtyard with fountain (and friendly good-luck tortoise!) to the amazing views from the roof terrace, this is a wonderful place to stay in the Fes Medina.
Our brilliant hosts, Stephanie and Nico, were attentive and able to answer all our questions, as well as arranging the excellent tours for us.
Their food was superb on the nights that we stayed in the Dar, and the breakfasts served on the roof terrace were a great start to the day.
