We spent half of our honeymoon at the Lamanai Outpost Lodge and had a wonderful time. The cabanas are great - artfully combining luxury with rustic charm. The location is great (if a little isolated), you're right on a large lake (they call it a lagoon) and very close close to a cute little village and within walking distance of the Lamanai ruins. The food was very good. The staff might have been the best part of the whole visit - from Eddie who took us up the New river to the resort, to our guide Star, the wait staff and management - everyone was very super friendly and accommodating.
My only complaint is a minor one. The resort relies on a decent sized diesel generator for electricity and depending on the way the wind was blowing we could sometimes heart it's hum from our cabana. It wasn't particularly loud but it did drown out some of the sounds of the jungle. The resort might want to consider installed a cinderblock sound barrier to mitigate this. Incidentally the generator also run a pump for the local village.
There's a small village a very short walk from the resort. We had a nice lunch at Orchididas one day. It's not a tourist mecca, in fact it doesn't even have electricity but it's nice to be able to get a sense of the local culture. If you can look past the garbage strewn about town it's a cute little village. They have a local craft center, a butterfly farm and a couple of small restaurants.
We split out time between Lamanai in the jungle and Kanantik on the coast. I'm glad we did it this way, each setting has its charms but both are fairly isolated and a full seven nights at one or the other might have been too much. At Lamanai we managed to take advantage of almost every activity they offered, from bird watching to a tour of the Lamanai ruins and a Mayan jungle medicine walk. We found ourselves going to bed at 10pm so we could get up at 5:50am for sunrise jungle walks and canoe trips. If you're looking for "excitement" or hard core partying you might want to stick with the more touristy areas in the Cayes.
If you're interested in the Lamanai Mayan ruins this is definitely the best place to stay. You can tour the ruins in the morning before the busses start arriving with hordes of cruise ships passengers and tourists from Orange Walk town. We practically had the ruins to ourselves the morning we were there.
