The other reviews you read largely have this right. My wife and I made Pyramid Bistro our first stop for lunch in Aspen during our stay in early February, based entirely on the Trip Advisor #1 Restaurant in Aspen rating. In brief, we were not disappointed. However, this is not a traditional "5 star restaurant" or anything of the sort, nor does it pretend to be. On the other hand, it is a really nice, small restaurant above a bookstore in downtown Aspen that serves largely vegan and vegetarian dishes (with a few meat and fish options). The quality of the food and the flavors was, in my estimation, excellent. The chef at this place comes out somewhat regularly to meet with customers and he did so during our meal. I don't know how he does it but the great flavor in our dishes was outstanding - and healthy. If you are looking for a unique experience, I recommend trying Pyramid Bistro.
