“GOOD and good for you.”

We came across one of Aspen’s gems on our day off from skiing. We discovered it by accident while browsing titles in Explore Books on Main Street. Pyramid Bistro is only accessible via a narrow stairwell in the middle of the store and well worth the climb. The atmosphere is light and airy with high ceilings, tasteful artwork and lots of natural light. The food was fresh and imaginative, beautifully presented, and best of all, delicious! Our server was engaging, knowledgeable of menu items, and ingredients and clearly dedicated to the restaurant’s mission of “serving the most nutrient dense foods for optimum health.” The red lentil & chick pea soup was unusual and surprisingly light. We were there for an early lunch and are looking forward to a return trip for dinner. Few places are truly outstanding and I am hard pressed to find anything at Pyramid Bistro that needs improvement.

“Still outstanding!”

We were excited to return to the Pyramid Bistro again this year and our experience lived up to our wonderful memories. Myself and 2 kids had another wonderful tasty wholesome meal in the lovely white-tableclothed atmosphere of the restaurant above the bookshop. We always enjoy the warm home-made bread ("it's not sugar-bread" our kids comment gleefully, being unable to stomach the sugary bread Americans seem to like). Our visit to the Pyramid Bistro was a much-anticipated highlight of our visit to Aspen - and the bookshop is a wonderful pre- and after-dinner bonus!

“Great food! Great for you!”

My wife and I, along with our 2 children, ages 9 & 11 had a wonderful lunch at the Pyramid Bistro. We loved that the menu was imaginative, the food fabulous, and everything was super nutritious. Our kids loved their meals, which is not typical in health-conscious restaurants. I had the soup and the mushroom burger, which were both excellent. Can't wait until Martin finishes his cookbook so I don't have to travel to Aspen to enjoy his recipes.
PS: service was also excellent! It is located above a wonderful bookstore. What a great combination!

“What a treat!”

We had a wonderful dinner at the Pyramid Bistro. We were intrigued by the bookstore that we walked through to get to the 2nd floor restaurant. The menu offered great choices with unusual combinations of foods, textures and flavors that were delicious. The ambiance was perfect for catching up with folks whom we haven't seen in a while. The staff were attentive and helpful. Don't miss dinner here if you find yourself in Aspen!

“Wholesome Little Number”

Saintly menu in quiet and sensible space above a great bookstore. The menu is concise and focuses, as much as possible, on organic food. Hearty soups with a twist, interesting salads, quirky pastas and delicious-looking desserts (couldn't treat myself). They are licensed and I personally witness the service of world's largest glass of sauvignon blanc. The staff were very earnest and happy to discuss whatever is on offer. You'll feel a smudge smug at your goodliness but there's always dinner ...
