My wife and I tried this established Georgetown destination for our wedding anniversary in part because so many other fine restaurants are dark on Mondays. It turned out to be an excellent choice, but with a few improvements it could have been great. Our primary waiter was outstanding – he knew the the restaurant’s history, the menu, and wines, and he gave us wonderful, personalized service. But the busboy and other staff were hovering which made us constantly aware of them. Similarly, the food was generally a hit, especially the starters (try the brussel sprout salad – it’s not what you’d think from the description, and is extremely tasty). But the lamb shoulder was slightly overcooked and just the slightest bit gamey. Overall, the restaurant is indeed excellent, but could be great with just a better balance between tasty, creative food and their “whole animal”, “sustainable” philosophy, and some less intrusive wait staff. Still, if you’re in Georgetown, 1789 is well worth a visit.
