Slovenia is already a gastronomic holy grail, lucky enough ignored by Michelin experts (while there are several places deserving one or two stars) and Separé is a great newcomer to vibrant Ljubljana food scene. A little bit off downtown (5 minutes drive), a nicely decorated modern restaurant has also a pleasant terasse (although exposed on the parking).
Dusko Daic makes a great job in the kitchen and I think I never had a look at the menu and always just discusse switch the chef what is the best. Among specialities, do not miss tuna/avocado tartar or Adriatic crab with burrata; seared scallops are delicious and octopus/asparagus starter is mouthwatering; after few sets of starters, come nice prima piatti - risotto with white summer truffle and scampi and pasta with bottarga (small portions so we are still alive). John Dory from owen or tuna steak are among the best mains.
All local/regional wines are there and the chef can suggest great matches, if need be.
