If all you're interested in is seeing the medieval town center, then a walking tour will serve you well. But then you'd miss what's unique about Krakow.
To get a true sense of the history of the people of Krakow, and a visceral sense of the plight of the Jewish community, then this bike tour is your best bet. You cover all three neighborhoods where the Jewish community was forced to live over the years (along with Schindler's factory), bike out to a great hill that has an amazing view of the city, and hit every site downtown you'd ever need to see. It's also very easy; I hadn't been on a bike in at least five years and had no trouble.
