We had no reservation, but at an early 6pm on a weeknight, we had no trouble being seated. Sounds like we were lucky! It became busy not too much later. Service wasn't spectacular, but service in Australia in general is a roll of the dice and usually you lose. (sorry, I hate generalizations, but ths is true.) I had the sirloin steak which was perfectly prepared and had phenomenal flavor. All the meat is locally grown so I shouldn't be surprised, but it was really a memorable piece of meat! Oh - and before I forget - the bread offered before the meal was perfect - flavorful, crunchy on the outside, soft and delicious inside - also locally made. I splurged and had an 'Absynth on my mind' cocktail which was perfect in it's lack of sweetness. It was a refreshing change from most overly sweet cocktails. This went amazingly well with the desert - an 'Eton Mess' which is my new favorite desert (yes, I'm American so this was new to me!). Light, tasty and fun - the perfect finish to the experience! Overall, I highly recommend Must. Yes, it's expensive, but before we went, I researched other dining options. You might pay a little more, but you get A LOT more flavor and satisfaction.
