Description: Our hotel restaurant was opened in 1897 by the Great-Grandmother Rosetta on the day of Pentecost. Since then, generations have alternated in the conduct of the room.We offer a daily local cuisine, using the raw materials that come from the family farm The "Tenuta di Meregone." Extra virgin olive oil to flavor our dishes taggiasca annafiandoli with our Ormeasco Pornassio, full-bodied wine and genuine.The menu changes every day depending on what is being harvested in our fields. Our kitchen can not be defined at zero distance, but at three miles, the same distance that separates us from our land. The dining room of the restaurant, like a small family museum, transfers the wealth of remains from the past. From old porcelain dishes to field tools, from the old gramophone to antique radios, pictures and documents in order to go back to a time that is no longer here. There is the cuisine though. That taste of good, which brings us back to the time when, happy children, we used to visit my grandmother in the countryside, has remained untouched . It is not difficult to make tasty dishes when you are not in a hurry; if every day, vegetables from our land, come to natural maturation, arrive on the shelves of the kitchen ... If you try to put your passion before all. When in winter the old American stove warms hands which are numb from the cold, memories of the stories of great-grandmother Chiarina come to mind: when in the morning, at five o'clock, around the stove, dozens of farmers and landowners fed on "Trippe accommodate con fagioli" (tripe with beans) or "Zimino di ceci” (chickpeas soup) or "Mesciuta di legumi” (mixed pulses), before stepping on the diligence, sitting on the mule or (more often) walking for hours to go to the hard work of the fields. Being here after all this time with the same commitment, certainly means not having disregarded the hopes of our ancestors, but above all, we have taken care of your needs for one hundred and fifteen years ... Our longevity is mainly due to the pleasure we feel when we meet your expectations.

We had another great week staying in the Santo Spirito. This is a very friendly & relaxing place to spend your holiday, the food & service was excellent. Molini is a great base to explore the many walks & things to do in this very picturesque valley. We will be returning next year!

“Comfortable beds, unforgettable food”

Stayed here as part of mountain bike trip and couldn't have asked for better service and the most amazing 3-4 course meals. Breakfasts are buffet style with plenty of food and the cappuccinos served in cereal bowl are the perfect start to the day Bravo!

“Italian home cooking”

Great food and plenty of it, charming service. The hotel has an interesting history as it was a brothel in the second world war, there is a framed price list in the restaurant!! there is also an very good collection of old valved radios. If you are in Molini di Triora must heat here for dinner. Local house wines are great.

“Amazing food, fantastic service”

Staying in Molini? This is one of the things to look forward to. As a group of hungry bikers, we were well looked after every day. Evening food is plentiful and varied - the homemade pasta is amazing and the house red very drinkable! Lots of interesting things to look at, too. The hotel restaurant (and much of the village) is closed on Wednesday.

“Relax, eat, enjoy!”

One of the most satisfying places to eat and stay for many many many miles around; it's not just the food - which is fabulous, copious and delicious - but also the ambiance of the witchy decor, the stacks of 1920's radios, the Casa di Tolleranza tarif-board reminding you of the building's seedier past...

Classic mountain dishes of variously meat, pastas, potatoes, vegetables, all swimming in delicious sauces with, of course, plenty of bread to mop it all up. Several courses later, you are guaranteed to end the evening feeling supremely full, warm, glowing and satisfied. Or end your lunch with an irrepressible desire to go for a digestive snooze in the sun, particularly after having consumed some lovely local vintage.

Highly attentive, Maria and her family are incredibly welcoming, humorous and friendly. You are treated as if you were a long-time member of the local community, as warmly as the old village regulars who fill out the restaurant every mealtime.

Have only just returned from the last trip to Molini, but am already looking forward to going back later in the year to Santo Spirito for another dose of how life should be.
