“Lovely Meal and Experience”

We have been here before on our last visit to the island and it was as good as before. Beautiful setting and great food and service. The food had great flavors and the menue very impressive.

“A fabulous restaurant to celebrate a special occasion!”

Our meals were absolutely delicious. Starters included a smoked Caribbean fish selection served with horseradish and ginger cream for me and a seasonal garden salad with balsamic vinaigrette for my wife - yum!

We followed with Crayfish sautéed out of the shell, vegetables with cashew cheese, rice. Wow! My wife LOVED her grilled Black Angus beef tenderloin with chèvre potato gratin.

We shared a dessert - 3 scoops of Rum-Raisin ice-cream made with aged rum.

I would highly recommend Hibernia for a romantic meal that will tantalize your taste buds - delicious and memorable.

Tip: The restaurant provided a roundtrip taxi ride from the Cuisinart Resort for $25 per couple. This is a huge value add because the trip from the West end takes about 35 minutes each way and a taxi would cost considerably more.

“Hibernia in Anguilla is brilliant !”

Had dinner with my partner in Hibernia April 2013. Mary Pat who operates the restaurant/gallery with her husband run a quaint and fabulous establishment that overlooks the stunning ocean which surrounds Anguilla.

If you have an appreciation for gorgeous flavours, antiquities, art and jewellery then this is the restaurant for you! The first thing that greets you is the tranquil landscaping in front of the restaurant - it's very much an East meets West themed garden.

The restaurant abuts a gallery with art from the East, local crafts and jewellery as well as antiques that are simply lovely - you'll be tempted to have some art shipped home if you have the wall space to accommodate.

Now the food ...it's prepared by a French chef who is one of the owners of the restaurant - for starters I had the fish soup which was tantalizing with chunks of fish gently flavoured and garnished; the entrees are designed to blend different flavours in such a way that complements rather than overwhelm. You would be remiss to forego the desserts such as the home made ice cream/sorbets - i had the lavender/vanilla/durian combo that was to die for !!

If you'd like to have a unique dining experience in Anguilla then this is one of the best that you'll ever experience. Enjoy!!

“UNIQUE FOR ANGUILLA!”

Anguilla is loaded with great restaurants. If you are on island for only a week it's tough to choose. I've lived here for 30 years and you can be assured Hibernia would be on our list if our stay was for only a week.

For a serene, soothing, dining experience with terrific food and an outstanding wine list both of which are beautifully priced, this hideaway is a stand out. It's easy to visit all of the restaurants and have the usual fish filets or beef or duck but every dish at Hibernia has it's own special flair. They smoke their own fish for an amazing appetizer, make their own yummy ice cream, and offer exotic Asian nuances to several of the main courses. No fish, crayfish, lobster will ever be over done. And those crayfish and lobster medallions allow you to avoid messing with sharp shells and splatters.

Of course you not only get to savor a delicious dining experience, you get to enjoy the subtleties that surround you. Original art, gorgeous views at lunch, an art gallery which includes stunning jewelry and the graciousness of Mary Pat and her staff. From the vase of flowers on your table to your calligraphy hand written bill to the exquisitely and properly poured chilled white wine, something rarely understood in a warm climate, all of one's senses are indulged by the experience.

For those of you staying in the west end, it's worth the drive. Plus, Hibernia offers a car service.

Mary Pat and Raoul have been serving us lucky ones for just under thirty years. They know how to do it and they always get it right!

“Great food, wonderful art, excellent view”

We were just in Anguilla for our annual visit. One of the things we look forward to is our annual lunch at Hibernia. The food never disappoints and we love the art the owners find on their visits to Asia. For the starter, we had the mushroom soup with almond broth and the smoked fish (tuna, snapper, etc). Both were incredible. For our main course, we shared the Tom Yom Pla, which is a stew of local fish pieces mixed with wonderful spices. For dessert, we had the amazing rum raisin ice cream using aged rum - remarkable. We always find something to buy in the gallery and we find other pieces we wish we had bought. Mary Pat, a very attractive Irish woman, adds a very pleasant exotic touch to the experience. Her handwritten bills are a piece of art unto themselves. Her husband is the chef. We love this place. Hibernia is in a location that is a long drive from a lot of the West End hotels and villas, so our suggestion is lunch. You will never be disappointed.
