We walked up from the town, itself beautiful, to the castle or "chateau fort" as it is signed and, if you are physically able, this is the way to get there. Lots of little streets with interesting buildings/museums en route and the - wow - the castle itself!
E 6.50 to get in and well worth it, especially as this was a sunny crisp autumnal day.
The castle is quite simply the most complete one we have ever visited with a well signed self guided tour and some stunning views over the surrounding town and forests.
We missed the start of the falconary display but spent that long there we could easily have caught the next one.

“Authentic castle with a great falconry show.”

The feudal Chateau of Bouillon is the main reason for visiting this picturesque Belgian town. This is no Disney-esque mockup, it's as authentic as it gets. 6.50 euros lets you wander the ramparts and explore the inner passages, torture chamber, oubliette and dungeons of this remarkably preserved castle. Be warned though, it's not for the unfit or infirm. And if you're over 6 feet tall, you'll need to do a lot of bending. Spend a euro on the printed guide in English as all the notices and commentary are in French and Dutch.
The falconry show is outstanding, make sure you time your visit to include it.

Godefroi's gaff was excellent €6-50 entrance fee adult. Family package available. 3 falcon displays a day.

“Our Very Favorite Castle in Europe so far”

We are an American family of five living in Holland. Visited the Cheateu de Bouillon during our stay in the Ardennes. We completely enjoyed this castle. It was rough and raw and authentic. They had a lovely raptor show which the children adored. Views were spectacular. Worth the drive!
