“Always a wonderful surprise”

It is difficult to add anything significant to the commentaries already uttered.
Fabulous cuisine, great surroundings, wonderful staff, great wine. But it seems that most of the observations are based only on a passing visit.

I, on the other hand, do the “passing visits” rather often as I have been very lucky to be introduced to the consistently original and never boring cuisine of chef Thierry Pszonka since the very beginning.
Every dish hides somewhere a little unexpected surprise explosion of flavors "sneaked in" just when you expect it least
The fish and seafood creations could be described only as wicked. As in Yummy.
The puddings! Don’t let me hold you up. One word - divine.
But what is most important is how consistently good the food and the service has been over the years. And that is no longer easy to find.
So well done Chef and all the staff of Chateau de Haute Serre. See you soon.

As global travellers, we've enjoyed fine food in many places and this one nicely adds to our list of memorable dining experiences. The entrance to the restaurant takes you past the neat vineyards of the wines you'll enjoy with your meal. Although the name suggests otherwise, the venue is not a chateau but a well restored outer building. The decor is modern - no pressed white linen here. The service was attentive and professional, but all in French. I didn't see any translated menus either. Perhaps this might be a helpful future addition, especially since the night we were dining, everyone in the restaurant was Australian! The food was excellent with a fixed price for 3 courses and a choice of two dishes for each course. From first mouthful of the entree, mine a scallop and salmon dish, I knew that this was very, very good food. Two hat/star level for that course based on our previous dining experiences in the world. We argued amongst each other who had chosen the best dish as both entrees were superb. We both chose lamb for main course. This was good but not to the same level of magnificence as the entrees. I think a cut of meat with more flesh and less fat would have been more enjoyable and some more optimisation with the accompanying flavours - the presentation was artistic and beautiful. Desserts were very nice but it was the entrees that won us. Wines were selected by our waitress as they are all in-house and they know them best. A nice touch was the chef visiting our table to ask about our enjoyment of the meal. I want to eat here again so I certainly recommend it. They have a kids menu and welcome little people. It is a bit out of the way but worth the effort. We've been living in the area for several months and only heard about it from Trip Advisor and word of mouth so perhaps some active marketing would increase its profile in the tourist community. In the meanwhile, its a hidden gem!

“Delicious and sophisticated cuisine in the heart of a winery”

I'm sorry but I can't help asking reviewer Inger N: if you can't drink Malbec wine what in the world were you thinking going to a Cahors vineyard for dinner? Were you expecting various vintages of Diet Coke, perhaps?

This is a first-class operation, a bit tough to find, so be sure your GPS is behaving. An old stone wine storehouse has been elegantly styled into a sleek restaurant amidst the vineyards -- beautiful lighting, streamlined contemporary look, tables nicely spaced apart for good conversation. Quite a number of French diners in evidence; always a good sign. Chef Thierry Pszonka -- now there's a name -- turns out highly polished, carefully controlled innovative cuisine which really works. It's never fussy for its own sake, never draws attention to itself, never has one-too-many-ingredients, never tries too hard, it just seems perfectly right and in harmony with the vineyard's wines and the total ambience of the place. Service is very friendly and efficient. The chef himself is in the kitchen, coming out to watch with an eagle eye as tables are served their courses. As used to always be the case in France but is alas not assured these days, the sauces are deep and intensely flavored, pulling together all the ingredients and complementing them with great skill and finesse. I wouldn't hesitate to come here again and it's a pleasure to recommend it for a special occasion evening.

“Live in Cahors”

When you go choose the menu inclusive the wine. It is a very complicated cooked food. Sometimes to much mixed together. Also if there is a dish that you can not eat, there are no alternatives. When I said I can not drink Malbec wine no alternative, only the same white wine I got for the first dish. And this is a wineries. Friendly staff, but why Paper table cloth. In this highly designed restaurant.

“This restaurant is the one NOT to miss”

We went yesterday for my wife's birthday. The service was exemplary, only exceeded by the quality of the food.
What can one say about the food apart from the fact we all four ate very slowly so we could savour all the different flavours.
We have already decided to return next year for my wife's round birthday, but then we will be a much larger group.
My wife and I ordered different dishes, which we then shared, so we had the opportunity to sample more, and then compare how we rated each dish.
This time we gave all the dishes the same excellent rating. This is a first for us.
