My wife & I spent an enjoyable 3 days over a weekend staying in a deluxe canal view room in the original hotel. The room and bathroom was a reasonable size and nicely furnished but lacked a chest of drawers for clothes that you do not wish to hang. My only real complaint is that they do not have double beds and, although they push them together and cover them with a double bedspread, they still make them up as 2 singles underneath the bedspread - very odd! The room was meticulously cleaned each day.
The inclusive buffet breakfast is superb with eggs freshly cooked to order if you want them. All staff that we encountered, from front desk to waitresses & maids, were friendly, approachable and efficient.
One thing to be wary about, especially if you are a light sleeper, is the proximity to the fish market. We only encountered this on the last morning of our stay as it is closed Sunday & Monday but I doubt if I would book 3 nights when the market is open, although perhaps rooms not on the front may be quieter. Otherwise the hotel is very well located so that shoppingand many places of interest are within easy walking distance.
We ate once in the restaurant in the new Pergola building where we felt that the food was only average, although the service was first class. They seem to be aiming for a 'fine dining' experience but are not quite making it and the menu could do with reviewing as some of the dishes just don't work. We ate there with some friends who had dined in the previous restaurant when it was in the main building and they felt the Pergola restaurant was disappointing in comparison.
Notwithstanding the above, all in all we had a very enjoyable & relaxing stay and will definitely use Die Swaene again when next in Bruges.
