I stayed at the Hans Brinker as part of a tour that my company sent me on. I would not have chosen it for myself, but as I was there, I thought it would be worthwhile to put down my thoughts.
I have stayed in a number of hostels, and this was the first one that actually lived up to the stereotype of "grungy and loud." If you are travelling alone through Europe and are 21 or younger, you will probably like it. The breakfast area (which becomes a bar) and the downstairs nightclub are seriously cool and extremely fun. If you just want an uber-cheap bed while you partake of Amsterdam's hedonistic pleasures, this is the place for you.
However, if you have marginally higher standards and want enough sleep to appreciate things like the Anne Frank House and the Van Gogh museum, stay away. The place is genuinely dirty and smelly, a fact in which the staff take pride. The beds are old and uncomfortable, and I usually felt grimier coming out of the "shower" (actually just a dribble) than I did going in. The rooms are very bare--there's no place to put your stuff besides the floor...which is filthy. And it's perpetually noisy.
The breakfast was truly, truly terrible. Again, I have stayed in many hostels, so I don't really expect much but this was just sad: untoasted bread, jam, butter, boiled eggs, processed meat and stale cheese. No water or juice--just coffee or tea. Cereal was extra.
There are many clean, fun hostels in Amsterdam, all of which I'd recommend above this one.
