Description: We mainly offer our guests a typical maritime cuisine, combining tradition and innovation, but never altering our first choice and extremely fresh ingredients. Our main concern is to offer an excellent selection of local meat and cheese paired with a rich wine list (more than 700 varieties) mostly composed by organic, biodynamic, naturally made wines with no chemicals. Not to mention the spirits and liqueurs menu (more than 250 varieties) and a pictured dessert menu daily offering a choice of 15 desserts or more, all beautifully served by the art of food presentation. The availability of the room is about 45-50 people in one room fully accessible to wheelchair users. In summer places increase to about 65 because you can dine outdoors in the beautiful square in front of the room (square of the Ancient Maritime Republics baptized by the municipality at the request of Beppe) lit by torches and candles.

We happened across the restaurant whilst walking during the day and decided to revisit for dinner when open having viewed the menu outside.

We were a little worried at first as we arrived shortly after the restaurant opened and there was nobody else in dining and we wondered if we had made a bad choice. We were welcomed inside and shown to a table in what is a very cosy and comfortable surrounding. We were a party of four and found the beer and wine selection very good and more than adequate for our tastes. As for the food, without doubt the best I tasted whilst in Pisa and a nice selection. My starter of mussels was a meal in itself, and the other starters chosen by our party, octopus, goats cheese wrapped in swordfish and a bruschetta all equally as flavoursome. For mains I was tempted by the lobster, but decided on the fillet steak as did two others. This was a good sized portion, cooked superbly and accompanied by a roquefort sauce. The meat was full of flavour and excellent value for money. Our other diner went for the duck which was cooked to perfection, but a big meal, so if you like duck and eat lots, this is a choice for you.

A great selection of desserts finished off our meal nicely. Overall we thought our meals were excellent quality and offered value for money for the whole dining experience. By the time we left the restaurant it was full of other diners with many locals eating there which is a good indication of the restaurants reputation. If in Pisa, look it up and visit, you won't be dissapointed. We stayed nearby at the Hotel Bologna, and this was the nearest restaurant to us so we were really lucky in discovering it. Definitely would visit again.

“Exquisite Italian food with a nod to the modern”

Friendly staff and in particular a knowledgeable and enigmatic owner / head waiter. Delicious food from the outset, high quality ingredients brought together intelligently and harmoniously. The bacon, scallop and Talisker 57 North Rissotto (served with Talisker) was sublime, if like me, you like peaty whisky then this dish is worth the visit to Pisa alone!!

“Amazing service”

We had one night in Pisa and were lucky enough to happen upon Le Republica Marinare. Aside from the lovely food, the service was wonderful. The wine selection in particular was impressive - they clearly know their stuff! Well worth a visit!

First time in Pisa and staying at Hotel Bologna. When we asked where as a good place to eat they told us to go here. I am so glad they did! The food was outstanding and the service was excellent. You need to eat here, you will not be disappointed.

“AMAZING!”

We were staying at the nearby Hotel Bologna and had read a couple of things about this restaurant on Trip Advisor and decided to give it a go due to its close proximity.
We are so glad we did!! Just off a little alley from the street we would never have found it otherwise............
We had a look at the menu before going and it was admittedly rather large, and a little confusing which I suspect is due to things being lost in translation but don't let that put you off!
We decided to keep it simple and order the Lobster spaghetti for two people and the T-Bone steak for two people followed by tiramisu and cheesecake.
It was quite simply some of the best food we have ever eaten! the pasta was tasty and the lobster a real treat and the steak was cooked to perfection!!
Would highly recommend!!
Great wine list too.......there is literally something for everyone here
