I recently went on a food/wine tour of Sicily. My first stop... a cooking class with Chef Vincenzo Clemente, a Sicilian born chef who spent 14 years working as a chef in Baton Rouge, LA. Fluent in English, Vincenzo has a sparkling personality. He guided me through the local markets where he shops daily for his restaurant, selecting ingredients for our private cooking class. Back at the restaurant, he explained techniques, culture and cuisine while providing a hands on cooking class in which we prepared four amazing dishes, including the most authentic, most wonderful caponata I had during my entire vacation. Taking a cooking class at Cin Cin can easily be arranged and is a wonderful experience. If you don't have time for a class, definitely do not miss going to this restaurant. It's so authentic, his Sicilian mother makes the desserts!
