Andalucia Center Hotel is within short walking distance of the main city square, the cathedral and the river. Make sure to get directions before you check in though.
The rooms were all brand new and completely dialed in with surround sound, king beds and lavish bathrooms with sunken tubs and frosted windows.
The rooftop deck had a great view of the city although the lap pool wasn't finished when I was there.
Parking is expensive but you can park on the street if you are diligent.
I wouldn't eat in the restaurant though (although they have pastries for happy hour in the small bar)
Granada has awesome tapas in the main square which is what I would recommend.
