My husband and I stayed at Hotel Klosterstuble for 1 night in October 2005 based on a recommendation from the Rick Steves guidebook. While we were not disappointed overall, the room itself was the low-point of the total hotel experience. We stayed in the older part of the hotel (they recently opened a new section in an adjacent building) for 92 euros/night ($110 US). Our room needed a major facelift, as the rugs were worn and dingy, the wall hangings dusty, and the decor looked straight out of the 70s. The bathroom was very small, even for European standards.
The new section appears to be very nice from seeing the new lobby and viewing photos of the new rooms in the hotel's entrance. However, the new rooms are pricier (112 euros/night; $135 US) and management requires a minimum of 2 nights' stay for weekend nights to stay in the new section.
The hotel's restaurant was fantastic. We dined there for dinner and breakfast. Breakfast is included in the price of the room. The restaurant serves authentic German fare, which is prepared by the propietor's husband (she runs the front of the house along with her friendly staff). The dumplings were the best we had during our 3-week tour of Europe. The salads are also excellent. Breakfast is served in the same dining room and includes a wide variety of cereals, breads, yogurt, meats, coffee, tea, juices, etc.
The hotel is located in an ideal area of Rothenburg, where shopping and sites are within steps, but the street the hotel is located on is quiet and peaceful. Overall, I would stay at this hotel again in the new section only or I'd wait until the older rooms received a much-needed renovation and facelift.
